Storm Waves and Egg Whites

I'm standing at my kitchen counter. It's another cold, windy, and rain-driven day where since dawn it always seem to feel like dusk, until it's dark. Right now I'm boiling 12 eggs in my attempt to make an egg white salad. After our run this morning, I made a kick-ass breakfast burrito. I will post the recipes. By the way, last night I opted for the vegan vanilla bean cake. I don't have a sweet tooth but don't think of me as too blessed. I have a full set of salt, fat and cheese teeth. Anyway, I expected the cake to taste like crumbled ass chips. It was deeerishus! And not too sweet.

So, since going to Rocky's in the morning instead of so many 12 oz curls, I've dropped about 12lbs as of this week. I haven't felt this fit in about 15 years - since running my ass off four hours a day in college. I'm not eating any animal proteins except for organic egg whites from a local farm, Judy's Family Farm up the road in Petaluma. Don't be a marketing victim and fall for the "free-range" label.... I could keep chickens in my kitchen cabinet and show them the light through my window once a day and call them free range.

Cousin Burly's Ass Blastin' Breakfast Burrito

1/2 cup organic liquid egg whites
couple of chopped grape tomatoes, a few broccoli florets
1 tbsp chopped red onion
1 tbsp pea sprouts
1 tbsp red cabbage
2 tbsp Eden Organic Black Beans (get their kind bc the cans are not lined with Bisphenol-A <- gnarly toxin in most canned foods)
1 Ezekiel 4:9 sprouted grain tortilla
salt and pepper to taste
2 tbsp Hot salsa (I use Roberto's hot salsa that rocks.... but it's made here in Santa Cruz and sold in local markets, not sure if it's distributed nationwide. Best salsa EVER).
Add cheese if you want (I didn't this time).

Because I'm lazy, I nuked the egg whites and veggies for about 6 minutes. Warm the tortilla in the oven at about 250 during that time. Put all the cooked egg mixture onto the tortilla, add the black beans and salsa. Nom nom nom!

Approx breakdown is: 

  • Calories: 273.08
  • Fat: 3.85g (don't ask me about saturated, etc. How the hell do I know? It's good fat, trust me)
  • Cholesterol: 0 (see, I told you the fat wasn't that gnarly.)
  • Sodium: 339.81mg
  • Carbs: 38.58g Sugars: 1.76g
  • Fiber: 7.67g of good ol' poopmakers
  • Protein: 21.62g (that is kick ass) We're here to pump (clap!) you up.
Next time I'm going to add some spinach and avocado. I was out of 'em today. Ok, my ovums be-a-boilin and I must attend to my egg white salad experiment.  Be back with the results in a bit. This rain is more persistent than Sarah Palin.
