Kinda Vegan But Not Really Egg White Salad. It's Still Good for You.

Why not the whole egg? Because everyone in my family dies of suddenly of a gnarly heart snafu. Also, I'm convinced when I see tiny black or red spots in the yolk that it's a baby chicken eye or vital organ and believe that particular chicken in that particular egg got fertilized and was going to grow up to be a very important chicken had they not shipped it to the hippie grocery store.

I realize it's unconventional to add carrots but we can use a little more beta-carotene in our lives and the orange livens things up. I shall even dare to say it makes my egg white salad sexy. After you eat this, you're gonna wanna shoop.

12 organic egg whites of boiled eggs, give yolks to a domesticated, or wild, animal in your house. Also, choose organic, not free range. Trust me. I worked on a poultry farm. I still owe you the tom turkey story.

7 tbsp High Omega-3 Vegenaise

2 cups each of coarsely chopped carrots, celery and onion. I say coarsely chopped because I'm lazy and bought the pre-packed prepped veggies at Whole Foods. Then, I ground those little fuckers up even further with my awesome Braun hand chopper thing my mom got me about six years ago as a house warming gift. Thanks, mom! So, probably less than 2 cups each if you're trying to be all artisan about your egg white salad.


 4 TBS creamy dijon

some tumeric for that yellow color

sea salt and pepper to taste

I put cayenne all in it!
Some squirts of lime juice
Some squirts of lemon juice

Chop up the whites and add all that stuff together then put it down your gullet.
Or....
Wrap it in a Ezekiel 4:9 sprouted grain tortilla or throw on some greens.

Here's the approx breakdown. Break it down! If you happen to eat a lot of this and get fat, it's not my fault because I'm really bad at math, although I think this is correct. I even consulted some calorie calculators. Remember the fats in here are GOOD fat.

  • Carbs: 8.68g, Dietary Fiber: 2.34g, Sugars: 3.95g

PS- This rain needs to stop. In two months and one week we'll be riding the warm waves of Costa Rica!
